Roasted Carrots and Fennel
|Skinny-ish carrots, peeled

|¼ cup (2 fl oz/60 ml)
|Sweet Potato Butter
|4 tablespoons (see below)
|Pickled Golden Raisins

|Sliced preserved lemon

|Sprigs of parsley, cilantro (coriander), and mint leaves, picked
Make the tagine
Place a large, heavy pot over low heat and feel the excitement build. Add the oil and onions, and let the backstage magic begin. Cook for 5–7 minutes until the onions begin to soften, turning them into the showstoppers they were meant to be. Remember, we don’t want them to brown—no diva behavior here!
